I love making big salads when I am feeding a group. This was super simple – butter lettuce and mixed green, rotisserie chicken, sunflower seeds and roasted butternut squash. Option to add a little blue cheese!! Top with my favorite go-to dressing!

Summer Salad

Ingredients

  • Salad
  • Butter lettuce
  • Mixed greens lettuce
  • Rotisserie chicken
  • sunflower seeds
  • Roasted butternut squash.
  • Blue Cheese Optional
  • Dressing:
  • 1 Tbsp red wine vinegar
  • 1 Tbsp minced red onion
  • 2 Tsp Dijon mustard
  • 1/4 tsp salt
  • Fresh ground pepper
  • 3 Tbsp walnut or avocado oil
  • (Whisk oil in at end)

Instructions

  1. Shred Rotisserie Chicken.
  2. Roast Butternut Squash
  3. Combine Butter and mixed green lettuce with chicken, squash, and sunflower seeds.
  4. Toss with dressing.
