I am loving these roasted winter veggies. And they are kid approved!

Roasted Winter Veggies

Prep Time: 5 minutes

Cook Time: 30 minutes

Ingredients

  • 1 lb peeled carrot
  • 1 lb peeled parsnips
  • 1 large peeled sweet potato
  • 1 small butternut squash
  • 3 Tbsp Olive Oil
  • 1 1/2 tsp kosher salt
  • 1/2 tsp pepper
  • chopped parsley

Instructions

  1. Preheat oven to 425 degrees.
  2. Chop up veggies to about 1 to 1 1/4 bites.
  3. Toss with 3 Tbsp olive oil, 1 1/2 tsp kosher salt and 1/2 tsp pepper.
  4. Place single layer on two sheets pans.
  5. Roast @425 for 30 minutes or until tender.
  6. Flip veggies halfway through.
  7. Serve with chopped parsley.
  8. Enjoy!
