Mexican Cauliflower Rice with organic ground beef (thank you @cleanfoodcrush for the inspiration)! I had a bunch of produce left in the fridge and threw it together for this one pot dish. The kids gobbled it all down too!  #choosehealth #cauliflowerrice#glutenfree #cleanfoodcrush

  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp dried oregano
  • 1 jar of corn
  • 1 lb of ground beef
  • 1 jar (15 ounce) crushed tomatoes

  1. In a large skillet heat 2 tbs oil over medium heat.
  2. Add the onion and ground beef sauté until onions soft and translucent and beef browned.
  3. Add the bell pepper, crushed garlic, chili powder, cumin, oregano.
  4. Stir everything together and continue cooking for another 5 minutes.
  5. Add any other veggies like corn, drained black beans and crushed tomatoes and stir everything together.
  6. Turn the heat to medium high and bring to a simmer. Cover with a lid and allow to cook for about 15 minutes, stirring intermittently.
  7. After 15 minutes has gone by, reduce down to a medium heat and stir the cauliflower rice into the skillet until it’s completely mixed in.
