Mexican Cauliflower Rice

Ingredients

  • 1 head cauliflower florets, grated
  • 2 Tbsps avocado oil, or olive oil
  • 1 small red onion, diced
  • 2 bell peppers, deseeded and diced
  • 3 fresh garlic cloves crushed or minced
  • 1 tsp sea salt
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp dried oregano
  • 1 jar of corn
  • 1 lb of ground beef
  • 1 jar (15 ounce) crushed tomatoes

Instructions

  1. In a large skillet heat 2 tbs oil over medium heat.
  2. Add the onion and ground beef sauté until onions soft and translucent and beef browned.
  3. Add the bell pepper, crushed garlic, chili powder, cumin, oregano.
  4. Stir everything together and continue cooking for another 5 minutes.
  5. Add any other veggies like corn, drained black beans and crushed tomatoes and stir everything together.
  6. Turn the heat to medium high and bring to a simmer. Cover with a lid and allow to cook for about 15 minutes, stirring intermittently.
  7. After 15 minutes has gone by, reduce down to a medium heat and stir the cauliflower rice into the skillet until it’s completely mixed in.
  8. Cook another 5 minutes to warm up the cauliflower. Once it’s nice and tender remove from heat.
  9. Serve with fresh lime, and cilantro.
